Il s&rsquo;agit d&rsquo;une technique de conservation <strong>relativement rentable et \u00e0 faible consommation d&rsquo;\u00e9nergie,<\/strong>essentielle pour prolonger la dur\u00e9e de conservation et assurer la salubrit\u00e9 des aliments. L&rsquo;utilisation de micro-organismes \u00ab\u00a0simples\u00a0\u00bb nous permet de produire des mol\u00e9cules simples,\ncomme l&rsquo;\u00e9thanol par la levure ou l&rsquo;acide lactique par les bact\u00e9ries. Des micro-organismes plus complexes\ncomme les cellules de mammif\u00e8res sont utilis\u00e9s dans l&rsquo;industrie pharmaceutique pour obtenir\ndes produits chimiques plus complexes comme des anticorps ou des m\u00e9dicaments.<\/p>\n\n\n\n<p>La fermentation industrielle <strong>n\u00e9cessite diff\u00e9rentes disciplines<\/strong> :\nmicrobiologie, g\u00e9n\u00e9tique, biochimie, g\u00e9nie chimique, biologie synth\u00e9tique, entre\nautres.
